Warm molten-centred chocolate cupcakes

Last night I baked these really nice chocolate cupcakes! They are really nice and easy to do so go on and try them! They are really nice warm so do not bake too many at the same time!

Ingredients:

4 tbsp soft margarine

55 g/2 oz caster sugar

1 large egg

85 g/3 oz self-raising flour

2 tbsp cocoa powder

55 g/2 oz plain chocolate

Icing sugar for dusting

Put 8 paper baking cases in a muffin pan, or place 8 double-layer paper cases on a baking sheet.
Put the margarine,sugar,egg,flour and cocoa in a large bowl and, using an electric hand whisk beat together until just smooth.
Spoon half of the mixture into the paper cases. Using a teaspoon make an invention in the centre of each cake. Break the chocolate evenly into 8 squares and place a piece in each indentation, then spoon the remaining cake mixture on top.
Bake the cupcakes in a preheated oven,190C for 20 minutes or until well risen and springy to the touch. Leave the cupcakes for 2-3 minutes before serving warm, dusted with sifter icing sugar.

Mine didn’t raise that much as I left them a bit too long in the oven! Ooopppss! But they were yummy though!
