Celery soup

I cooked celery soup. If you usually read my blog you will know that I am following the Dukan Diet. I find it quite easy to follow as I am allowed to eat as I want.Anyway last week I was In need for some soup so decided to make some celery soup – had some in the house…

Never done it before so I used the good old Internet search to help me and discovered a very simple recipe on the BBC website.

Here it is:

Ingredients
1 tbsp olive oil
1 garlic clove, chopped
1⁄2 red onion, chopped 150g/51⁄2oz celery, chopped 200ml/7fl oz hot chicken stock
2 slices toasted ciabatta, to serve
Preparation method
1. Heat the oil in a saucepan and cook the garlic, onion and celery over a low heat for five minutes, until softened.
2. Add the chicken stock and simmer for 10-12 minutes.
3. Transfer the soup to a blender and liquidise.
4. To serve, place the soup into a bowl with the toasted ciabatta alongside.

When it was ready the soup smell really yummy.

My family verdict for this recipe: not the best ever soup but healthy and filling!
Daughter didn’t like it, daddy ate it with toasted bread and mummy put a dollop of Total Greek 0% yogurt on top of the soup. The yogurt gave the soup a really nice taste.
