Banana bread with almonds

Every week we buy bananas. Some weeks we eat them all some weeks we buy too many and at the end of the week we end up with over riped bananas. When that happens i either bake chocolate banana muffins or a banana bread.
Last sunday i thought a banana bread will be good so that’s what i baked.

Ingredients:

  • 3 ripe or very ripe bananas – you could use good ones but you might need to mash them with a mixer; if they are very ripe then it it ok to be squashed with a fork or with the potato masher;
  • 125 ml vegetable oil;
  • 2 eggs;
  • 100 gr of soft brown sugar;
  • 225 gr of plain flour;
  • 1 teaspoon bicarbonate of soda;
  • a handfull of almonds cut really small;

As said before mash the bananas and on top add the oil and eggs and mix. When all mixed add the sugar,flour and bicarbonate of soda. Add the dry ingredients bit by bit as you need to make sure the composition is mixed well.

At the end add the almonds and then pour the composition in a bread tin. Yes it’s not like a normal dough this one.

Put in a preheated oven at 180C and bake until browned. As you can see i kind off left the bread a bit longer in the oven but you can cook it as you like it.
