Pasca recipe

This is a recipe that my mum usually prepares for Easter. It’s easy and there’s no kneading required.
The perfect recipe for me really as as you know I don’t do we’ll kneading

Ingredients:


700 gr cottage cheese
6 large eggs
400 g sour cream
200 g butter (room temperature)
200 g sugar
4 tablespoons semolina
4 tablespoons flour
200 gr raisins
seeds from a vanilla pod or just vanilla essence


Preheat the oven at 180 C.
Start by breaking the 6 eggs and adding them to a big bowl. Add the sugar and vanilla and mix well with a mixer.
On top of the egg and sugar mixture add the cottage cheese and mix well again. This time you can just use a spoon. When all mixed add the butter and again mix well.
Then add he flour little by little and mix well after each time.
Add the semolina and add a bit at the time exactly like we’ve done with the flour.
At the end add the sour cream and the raisins. When these are mixed in too pour the whole lot to a high baking tray.
You could use a baking paper or just butter the tray with butter and then sprinkle some flour.
Put in the preheated oven and bake for 40-45 minutes or until the “pasca” is golden on the top.

When ready take it out, let it cool and then cut as you preference it.
