carrot muffins

Carrot muffins with raisins and walnuts

 

I am a bit more in the kitchen (although one with an actual cooker and sink is not in place yet) so i am trying to cook more for my children. Boogie is always asking for muffins and cookies so yesterday i obliged myself and baked some. I tried to make them as healthy as possible so that my 9 month old baby can at least taste some.

 
 

Kara was my little helper. She passes me the ingredients one by one and she helped me mix them.

Ingredients:

    • 1 cup white plain flour

 

    • 1 cup whole wheat flour

 

    • 1/2 cup soft brown sugar

 

    • 2 tsp baking powder

 

    • 2 tsp baking soda

 

    • 2 tsp cinnamon

 

    • 4 eggs

 

    • 1 cup oil

 

    • 3 cups carrots, grated

 

    • 1 cup chopped nuts

 

  • 1/2 cup raisins

Preparation:

 

    1. Preheat oven to 180 degrees Celsius

 

    1. Mix together all dry ingredients

 

    1. Beat eggs and add oil

 

    1. Combine dry ingredients with egg mixture

 

    1. Fold in carrots, raisins and nuts

 

    1. Pour into muffin tin, wells lined with muffin liners or lightly coated with non-stick spray

 

  1. Bake for about 20-25 minutes, or until set.

Kara’s verdict: Mummy i thought they will have chocolate….hm…never mind these are good too!

 

Anastasia’s verdict: Just shaking her head for NO at the sight of the muffin.

 

Mummy’s verdict: I wish i could eat them all but really one is enough!
