My girls love meatballs but as the beef taste is different over here i thought i would try and make meatballs with chicken instead. It was a very good idea so now i decided that it will be good to share the recipe with you my readers too.

Ingredients:

For the meatballs:

  • 500 g of chicken tights
  • 3 eggs
  • 2 tbsp greek yogurt
  • 1 small zucchini grated
  • 1 small onion
  • 1-2 cloves of garlic
  • 1 slice of bread without crust and soaked in milk
  • a handful of parsley and dill
  • 2-3 tbsp of olive oil
  • salt & pepper if you wish;i prefer not to add them as i feed little mouths

For the sauce:

  • 3-4 medium tomatoes
  • 1 small onion
  • 1 clove of garlic
  • 1-2 tbsp of oil
  • 1/2 or 1 cup of water depending how big your pan is and how much sauce you want to make

Start by cleaning the chicken tights, take the skin off and remove the meat of the bone. I thrown away the skin as it is not good in meatballs and it has a lot of fat too. Cut the meat pieces if necessary and add them to a food processor to mince. Add the eggs and the yoghurt and mix well. Before adding the grated zucchini make sure you get rid of all the water that might in it.

Add the zucchini too and mix well and the onion, garlic and the soaked bread. With the bread you need to make sure as well that it doesn’t have any milk left. So squeeze it well before adding as we dont want our meatballs to be soggy.

At the end add the dill and parsley followed by salt and pepper(if you add any).

Mix well for 1 – 2 minutes until you obtain a homogenous composition.

With your hands slightly damp start rolling the meatballs. I chose to grill the meatballs as i think it is healthier than frying but you can do as you wish.

Using a brush spread the olive oil on your grill and when is very hot start grilling the meatballs.

When you finish leave them to cool for a bit. During this time you can cook the tomato sauce.

We need the meatballs to cool a bit because as they don’t have any flour on them we are in the danger to split if we add them in the hot sauce straight away.

The sauce is very easy to make.

Add the oil in a pan with a thick bottom  – it is harder to burn the onion and garlic.

Add the chopped onion and garlic and fry until it becomes soft but not burned. In the meantime peel the skin of the tomatoes and chopped them really well. Add them to the pan and let them boil until the tomato juice becomes thicker.

When the tomato sauce has the consistency you like then you can add the meatballs and the 1/2 cup of water and bring everything to boil. When it gets to a boil then boil for about a minute or two.

You can also sprinkle some fresh parsley or dill on top of it. it gives the dish a fresher wonderful taste.

 

The sauce can be served with mash potatoes, boil rice or spaghetti – my girls favourite.
