Making Your Own Christmas Presents: Cookies

   As you know from my previous posts i love baking and cooking because it’s so relaxing. It is something that i can do with pleasure and without stress especially when i use the best tools and ingredients out there.

   This time around the lovely people from Renshaw Baking send me all the ingredients I need it to create my Christmas presents this year. I chose to make cookies as they are something that no matter how old you are you always enjoy eating.

Ingredients for the actual cookies:

  • 125g of unsalted butter
  • 55g caster sugar
  • 180g plain flour
Ingredients for decorations:

  • 250g Renshaw Original White Marzipan
  • 250g Renshaw White Ready to Roll Icing
  • 250g Renshaw Poppy Red Ready to Roll Icing
  • gold & pink shimmer balls

Preheat the oven to 190C. Cream together the butter and sugar until it is nice and smooth and then gradually sift in the flour to form a smooth paste. 

Wrap the shortbread in cling film and leave to rest in the fridge for 30 minutes.

After the time is passed take the dough out and knead lightly and roll to the desired thickness. Using your preferred shapes cut them out and lay them on a lined baking tray. I used round shapes, snowflakes and stars.

Put them in the oven and bake for 15 – 20 minutes until pale golden brown.

Remove from the oven and leave to cool on a rack for 30 minutes.

While the cookies are in the oven you can start preparing your marzipan and roll icing. As you can imagine i didn’t use the whole of the packages so i cut small pieces out of them. 

Prepare a tray and sieve some icing sugar on it. This is to put your cut out shapes of marzipan and icing sugar.

Firstly knead the marzipan and roll icing until they become pliable to roll out. Dust the woking surface with some icing sugar and roll out the marzipan and the roll icing to the desired thickness. Using your cutters cut out the shapes. You will know how many you need out of each type. 

When the cookies are out of the oven and cooled you can stick the marzipan and rolled icing to them. Marzipan sticks better with cooled hot apricot jam and the rolled icing with cooled boiled water.

At the end just add the shimmer balls as you want on the cookies by just pushing them into the marzipan/icing.
