When kids are on their holidays they always demand sweet things don’t they? The “Mummy please can you make me some cookies/muffins/ice cream etc. I can help!”

And you are like me the mother of a 5 year old you know that the help is not there for long – they get bored fast bless them. This time around she even help for longer and these cookies actually took longer than expected because her little sister wanted to participate as well so I end up holding her in my arms.

This is a recipe we always use and is just great as a base! You can even add cacao if you want to make them chocolatly! This time around Kara wanted little chocolate pastilles in them so I let it be her way. After all they are the ones eating them mostly! Oh and their father and grandparents!

Easy Cookie Recipe

Ingredients
  • 250g butter, softened
  • 200g light brown soft sugar
  • 250g caster sugar
  • 2 eggs, lightly beaten
  • 2 tsp vanilla extract
  • 450g self-raising flour
  • 1tsp salt
  • 400g chocolate bom bons
Instructions
  1. Preheat the oven to 180°C.
  2. Cream the butter and sugars ,once creamed, combine in the egg and vanilla.
  3. Sift in the flour and salt, then the chocolate bonbons.
  4. On a baking tray lay some baking paper – it is good as the tray will not get dirty.
  5. Using a dessert spoon take portions of the dough and spread them around the baking tray.
  6. Let your child dip the bonbons into the dough. Make sure they don’t add too many like my daughter did.
  7. Bake between 7 – 10 minutes depending how chewing you want them and how think they are.
  8. Take out of the oven and leave to harden for a minute before transferring to a wire cooling rack.
  9. They are great to eat with warm milk and your kids will love them!
