Cinnamon and soft brown sugar cookies

Cinnamon is one of my favourites spices! It reminds me the most of my grandmother serving me hot rice pudding sprinkled with a bit of cinnamon on top. Oh…i need to make some for my girls soon!
 
Cinnamon and the soft brown sugar make one of the best combinations in my opinion and this is why i decided to combine both in my basic cookie recipe.

Ingredients:

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsp ground cinnamon
  • 1 cup butter, softened
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
Instructions:
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon and put on the side. 
In a large bowl, beat together the butter, brown sugar until creamy and smooth, about 2-3 minutes. I prefer to use a mixer as it goes faster and a lot smoother.
Gradually beat in flour mixture. Refrigerate the dough until cold, about an hour or so.
Preheat oven to 180C and line a baking tray with baking paper.
Take the dough out out the fridge and start breaking little pieces of it. Roll little balls and add on the baking tray taping each one of the balls a bit on top. 
Bake 10-12 minutes or until the edges are set.
Wait a few minutes before transferring to a cooling rack as otherwise you will burn those fingers.
 
Cool completely and eat! They are yummy and they don’t have a lot of sugar which makes them quite healthy.
