Baked polenta cakes-Alivenci

This a very popular dish and loved by kids! Ingredients: 1 lb. Farmers cheese(soft cheese) 4 eggs 2 tbsp butter soft 1 cup of sour cream 3 tbsp yellow corn meal 2 tbsp of flour 2 tsp saltIn a bowl stir the cheese well with a wooden spoon until it becomes creamy. Separate eggs and beat the yolks slightly. Whip egg whites until stiff. Preheat your oven at 180C Add yolks to cheese and mix well. Add 4 tbsp sour cream and 1 tbsp butter and again mix well. Next add the corn meal,flour and salt. Mix again and then fold in the egg whites. Mix batter by hand or with an electric mixer until smooth. Butter an oven dish and bake batter until the surface is nicely browner about 30-40 minutes. Cut into squares and serve immediately. The cakes get hard quickly as they cool. Top with sour cream and enjoy!
