This recipe is inspired by Donna Hay Apple & Blueberry Cake. I used her ingredients and method for the sponge cake but adapted to the fuits i had in my house.
So here it is….
250g SR flour
150g Castor sugar
125g softened butter
1 tsp Vanilla essence
1 apple, cored and sliced(i used a nectarine)
1 cup Blueberries(i used blackberries)
2 tsp raw sugar granules
Put all the ingredients into a mixer(not the fruits) and mix for 5 to 15 seconds. Spoon the mixture into a greased tin lined with nonstick baking paper.
Put the sliced apple or nectarine on top followed by blueberries or blackberries. Really i think you ccan use any combination of fruits. To finish sprinkle with demerera sugar.
Bake in oven at 160C for 45 mins or until skewer comes out clean. You can serve it like that or with some cream.
