Butternut squash with spinach and peas
Tonight in would like to share with you a recipe for a yummy food suitable from 6 months. This is one food that my daughter use to love when I was weaning her. Well….she loved everything that had spinach in it and this happens to be one of them.
So…you will need:
2 tsp sunflower oil
125g leek,diced
100g butternut squash,diced
80g peas(frozen)
150 ml milk
150 ml water
35g Parmesan,grated
30g baby spinach
10g fresh basil
1/2tsp Dijon mustard
Heat the oil in a saucepan and then sauté the leek and squash for 8 minutes. Add the peas , then stir in the milk and water. Bring to the boil and then simmer for 5 minutes. Add the Parmesan ,spinach,basil and mustard.
Stir all until wilted and then blend until smooth or to the desired consistency.
This is suitable for freezing so you can go on and freeze in whatever small portions you need.
