Baking cupcakes
Last week my daughter and i experimented baking and decorating cupcakes.
We were not very successful because we forgot about the cupcakes baking in the oven and they end up a bit dry. Thanks God that there was enough icing and decoration to put on them and cover them up.
My daughter love eating them though:
I used a basic cupcake recipe from a book i bought from a charity shop by not a known author. So here it is:
115g margarine
115g caster sugar
115g self-raising flour
2 eggs
All you need to do is mix all the ingredients into a bowl and beat until smooth. After separate the mixture between 12 paper cases set in a muffin tin. Bakes them in a preheated oven 180 C for 12-15 minutes.
The cupcakes will be ready when they are well risen and the cakes spring back when press with a fingertip.
Leave the cupcakes to cool and prepare the topping with:
50g butter
115g icing sugar
pink food colouring
As soon as the cupcakes are cool you can start decorate them as you feel like it. I am not the most creative person in the world and you can see that from my pictures above.
Anyway my daughter loved them as you can see.
Last weekend i bought a different cook book and i hope it will teach me a bit more about baking.
