Squash soup

The cold weather is now here…It came with rain and colds. First my daughter had a cold and then i had a cold(well i still have it a little bit) and i think next is daddy. At the same time with the cold weather comes our desire to eat hot food! What is better then a soup when outside is cold and rainy?

The squash soup i cooked is not a traditional Romanian soup – although we do cook cream soups in Romania too – but it is tasty and my hubby and i love it! We can’t say the same about my daughter but hopefully with time she will learn to like it too!

– 2 tablespoons of oil;
– 1 medium squash peeled and cut into small pieces;
– 1 medium white onion peeled and cut really small;
– 2 cloves of garlic shredded;
– 300 ml chicken stock;
Note: i didn’t add salt and pepper when i prepare it because i prefer my daughter to eat it without it. 
In a soup pan add the 2 tablespoons of oil and put on a medium hob. When hot add the onion and the garlic and fry for a little bit – do not let them get burned as they just need to become a little bit soft. On top add the squash and again fry a little bit maybe for like 2 minutes.
After the 2 minutes add the hot stock on top. Cover the soup pan with a lid and let it boil.
When the squash has become soft stop the hob and let it cool for a bit.
If you think that the percentage between squash and water is ok then with a hand mixer liquidize it. We like the soup to be a little thick as you can see in the picture but if if it’s too thick for your taste then add a bit more hot water and mix.
The soup can be serve immediately. I ate mine with a spoon of yoghurt on top and salt and pepper. And of course some toasted bread 🙂
The soup was yum and my throat “felt happy”!
