Chicken and rice with vegetables

Time for another recipe my lovelies! Chicken and rice was one of my favourite dishes when I was a child. My mum told me that was the only thing I wanted to eat! So tis is nevertheless pretty much a replica of my mum recipe but of course with my twist.

I tried to cook it a little bit healthier though. So here is what I done.
Ingredients:
– 2 tbsp of oil;
– half of medium onion diced;
– chicken legs;
– 1 cup of rice;
– 3 cups of chicken stock;
– frozen vegetables: carrot,broccoli,peas;
– seasonings;

Rice: Take a shallow pan and add a couple of tablespoons of oil to it. When hot add half of white onion finely diced and fry for 1-2 minutes stirring continuously. Depending on how much rice would you like to make add the rice to the pan and fry it for another minute or two. On top add hot chicken stock. I normally add 3 cups of stock to 1 cup of rice. Cover and bring to the boil. If you want to add vegetables like I did then when the water boil once turn the hob right down and add the vegetables you need and boil until they are cooked. If necessary you can add more hot stock or just hot water to help all ingredients boil well. Of course you can use any vegetables you wish. I prefer to use the new I have in the freezer – mixed vegetables – because they boil a lot faster. As you can see from my picture the vegetables I added are:peas,carrot and broccoli. When everything is boiled than all is ready.

Chicken: Warm the oven at 180 C. While the oven gets warm prepare the chicken by washing it well and seasoning it. Add the seasonings you want. If you want them chilli you can add chilli. I only added a bit of oil and salt and pepper. Line the chicken on a baking tray but not without adding greaseproof paper first. I love using greaseproof paper as its saving me from having to scrub. Put in the oven and let it cook until crisp. Make sure you check every 10-15 minutes so that the chicken gets crisp on all around.

Probably the best is to start cooking the chicken first and then rice as it might take longer if you use fresh vegetables.
