Mini banana cupcakes
For her birthday Kara received this cupcake kids kit.
And since then she keeps nagging me to make some with her.
This is why this weekend as a surprise I decided to make her happy.
As we also had some bananas that saw better days I thought it is time for me to try and make some cupcakes with fruits in the actual cake.
So this is what you need:
– a mini cupcake silicon tray;
Ingredients for the sponge:
125g unsalted butter, at room temperature
80g caster sugar
2 medium eggs
125g plain flour
2tsp baking powder
2 small/medium bananas, mashed
Ingredients for cream:
125g unsalted butter
100g icing sugar
3-4 drops of vanilla essence
Decorations:
Little chocolate buttons
Shavings of milk chocolate
Preheat oven to 180ÂșC.
In a mixing bowl, cream the butter and sugar until fluffy. Gradually add in the eggs until mixture is smooth. Fold in the flour, baking powder and the mash bananas.
Divide the composition between the mini cupcakes in the silicon tin and bake for 20-25 minutes. Let them cool and take them out of the silicon tin in a plate.
Before decorating make sure that the cupcakes are completely cool.
While the sponges are in the oven make the buttercream by creaming the butter with the icing sugar and the vanilla essence.
Using a pipping bag decorate the cupcakes as you wish. Add the mini chocolates too and they are done!

I also made a couple bigger using a different silicon tin.
