An intelligent cake
Every time we come to Romania my mum makes this cake. It is very light so it is my husband favourite. I should say that this cake is my mum signature at the moment. I tried to make it too but for some reason i just can’t make it as nice as her. I need to practice and get my technique right i think.
If you would like to give it a try here is the recipe.
Ingredients:
- 9 eggs
- 9 tbsp of plain flour
- 1 liter of milk
- 300 gr caster sugar
- 4 tsp vanilla sugar
- 200 gr unsalted sugar
Preparation:
Preheat the oven to 180 C.
Separate the yolk of the white and put in two separate bowls.
Beat the yolks with the sugar and the melted butter(make sure it is not hot though). Add the milk(which you need to warm a little bit) little by little until all mixed. At the end add the flour and mix slowly until all mixed again.
Separately beat the whites until they become hard.
Pour the egg white on top of the yolk and flour mixture and mix with a wooden spoon slowly. It is very important to mix everything slowly.
Butter and dust flour on the chosen tray and the pour the mixture in it.
Put in the oven and bake for one hour. When the hour passed turn off the oven and leave the cake in it until it cools down.
Keep in the fridge as it has lots of eggs and milk.
