Easy Scones Recipe

Cold weather, hot tea and scones…the perfect combination don’t you think?

I remember the first time i saw the words “Tea cake” in the window of a cafe and i asked my hubby what they are. He just too my hand and sat me in and ordered them. Since then i fell in love with the idea and of course the scones.

I like them simple with a bit of jam.

Since then i always wanted to make them but only about a week ago i finally give it a go.

Ingredients for about 16 scones:

4 cups of plain flour
6 tsp of baking powder
1 pinch of salt
2/3 cup of oil
2 eggs
2/3 cup of milk

Start by mixing the dry ingredients – flour, baking powder and salt in a bowl.
In a cup put the oil and the egg and beat well. Fill the rest of the cup with milk. Put the oil and milk mixture into the flour and mix well until it comes together.
Take the dough out of the bowl and put it on a floured board and pat down with your hands until the dough is about 5 cm thick.

Using a little cup cut out rounds out of the dough and place them on a baking tray. Bake them in a hot oven – 200 C – for about 10 minutes or even 15 if you like them a bit more well done.

Hubby said they were really nice!
My first batch was disastrous as i added just a little bit too much milk. The second time though were really good.
