Tuna potato pasta
My girls love pasta and tuna and all their combinations. So one day when I was watching Food Network I think I saw how this italian lady was boiling potatoes and pasta together and than combining them with tuna.
My eldest saw a glimpse too and then she also asked: “Mummy can you cook that for us too?”. And of course I did. I love a challenge. I looked up the recipe but I didn’t have all the ingredients. I was missing the peas and the basil – the most important flavour one will say but I still made it.
The girls and husband loved it though so I continue to make it in all kinds of combinations. First time I used spaghetti like I saw the Italian lady on TV do but I don’t always buy them when husband is away. And as I buy the pasta bows a lot this time around I made the recipe using them.
I love how the starch of the potatoes emulsifies the pasta…so I think this will be one of the recipes that I will continue making. This is why I thought it was the to share the recipe with you too.
- 2 potatoes
- 80 g of wholemeal pasta
- 1 cup of frozen peas
- a can of tuna
- 2 tbsp of green pesto
- parsley
- salt and pepper
- In a large pan, put water and a bit a sprinkle of salt to boil. When it starts to boil add the pasta and the potatoes. Its easy like that. You might think that you need to boil the potatoes first but you don't. Because the pasta are brown they boil at the same time. It should take about 20 minutes or so. Separate boil the peas.
- When they are boiled take the water out and add the peas, tuna and pesto. Mix well and season with salt and pepper and garnish with parsley.
- You can also add some cheddar or parmesan if you wish but they will be very tasty anyway.
