    My first pumpkin pie

Last week my husband brought home a huge pumpkin. Unfortunately I don’t have a picture with it but believe I was scared but its size. It must’ve been around 3 kg. So decided to try something new, something I never cooked before – a pumpkin pie , the American type. Of course the pumpkin was way big so I end up making a curry as well. So with the help of one of the books my hubby bought for me for Mothers Day I dared baking my first pumpkin pie ever. Ingredients: 1 pumpkin(or big enough to make about 500g of purée) 2 eggs 225g light brown soft sugar 3…

  • Chocolate cake dairy free

    Easy peasy chocolate cake(dairy free)

This is truly a easy peasy chocolate cake. You don’t need any special baking skills believe me! The actual cake without the cream frosting is egg and lactose free. Oh but if you use dark chocolate then it is completely a dairy free cake. Ingredients for the cake: 1 1/2 cups self raising flour 1 cup caster sugar 3 tablespoons unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon salt 6 tablespoons vegetable oil 1 teaspoon vanilla extract 1 tablespoon white vinegar 1 cup cold water Ingredients for the cream frosting: (This is a variation of my frostings I used for my cupcakes) 250g butter 250g icing sugar 3 tablespoons…

  • No-bake dark chocolate cheesecake

This weekend I decided that it was time for me to make another cheesecake. I mean its been a while and I know how much my hubby likes them. Last time I made a milk chocolate cheesecake as hubby like milk chocolate not dark chocolate. Anyway this time around I thought I would give it a try and see if he likes it. Figures that he loved it! The recipe is more or less as the one I previously posted on the blog although I used sour cream instead of whipping cream. Ingredients: 150g digestive biscuits 45g I salted butter 100 g caster sugar 3 big tablespoons of sour cream…

  • The challenge of the sponge mix

A while back I bought this sponge mix from Morrisons and Saturday I decided to give it a try and bake a cake. So I mixed it all with some water and egg as advised by the instructions on the bag and pour it in a bread-cake tin. I then defrosted some of the berries I had in the freezer and top the sponge mixture with them. Put it in a preheated oven at 180C and this is what I got: My fruits got on the bottom of the cake instead of staying on top…yup! Maybe that is the way the sponge cake should grow and not allow fruits to…

  • Fruit cake with peaches
