  • Red velvet cupcakes

I baked these cupcakes a while ago but never really found the time to write about them. But now that we are about to celebrate the orthodox Easter I thought it will be a good opportunity. When I look at the pictures I get the feeling of fresh and spring so if you already celebrated Easter I am sure that you could still bake the cupcakes and decorate them for Spring instead. Well that if you actually see any signs of spring where you are ūüôā Here we still have a lot of rain and it’s still chilli – not at all like spring I must say. 5.0 from 1…

  • Meaty Cupcakes

    Meaty Cupcakes

Cooking for a 2 year old and a 5 year old can be hard at times as most of the times one of them will definitely refuse to eat. They never like the same things and usually one of two plates ends up in the trash. As mummy is on a diet…they usually eat differently. However there is one thing we can all eat together – meaty cupcakes! I mean they do eat meatballs cooked in the oven too but changing shape is just lovely for them. 4.5 from 4 reviews Meaty Cupcakes   Print Prep time 10 mins Cook time 25 mins Total time 35 mins   Meaty Cupcakes…

  • Low calorie apple and cinnamon muffins

A while ago I was sent some of the best ingredients and asked to replicate one of the recipes from the Baking Mad website. And so I did. Tried out the recipe for apple and cinnamon muffins. You can of course find the recipe on their website by clicking the last link above. However, I had to adjust the ingredients as the ingredients didn’t come together quite well. I added a tiny bit more flour – 50g – as the batter was a bit too floppy and I was afraid that they will not raise. I still baked some muffins where I didn’t add the extra flour and they…

  • Cupcakes with white chocolate icing

Baby A had chicken pox for about a week so on Monday we spend all day at home. Every time we stay home Kara wants to bake with mummy. she asked for cupcakes but without the creamy icing. Yes she’s a strange child that doesn’t like things that are too sweet. And believe me my butter icing has half the sugar that’s usually in normal cupcakes. But then I found some white cooking chocolate in the cupboard and decided to melt it and put it on top of the cupcakes. But without further ado here is the recipe. Ingredients for about 12 buns: 175g unsalted butter, softened 175g caster sugar…
