• The challenge of the sponge mix

    A while back I bought this sponge mix from Morrisons and Saturday I decided to give it a try and bake a cake. So I mixed it all with some water and egg as advised by the instructions on the bag and pour it in a bread-cake tin. I then defrosted some of the berries I had in the freezer and top the sponge mixture with them.   • Nectarine and blackberry cake

       This recipe is inspired by Donna Hay Apple & Blueberry Cake. I used her ingredients and method for the sponge cake but adapted to the fuits i had in my house. So here it is…. Ingredients: 250g SR flour 150g Castor sugar 125g softened butter 1 tsp Vanilla essence 2 eggs 125g milk 1 apple, cored and sliced(i used a nectarine) 1 cup Blueberries(i used blackberries) 2 tsp raw sugar granules Put all the ingredients into a mixer(not the fruits) and mix for 5 to 15 seconds.
