Roast of sausages and butternut squash

In a quest to try and eat more healthy and without too many carbohydrates i cooked this easy sausage and butternut squash roast.

Ingredients:

8 low fat sausages

1 medium butternut squash deseeded,peeled and cut in wedges

2 red peppers deseeded and cut into chunks

1 white onion peeled and cut into big slices (you can use red onion instead)

2-3 tbsp of olive oil

favourite herbs-i used a mixture of thyme and dill

Preheat oven at 200 C. Put the sausages , squash, peppers and onion in roasting tin. Mix the herbs with the olive oil and then drizzle on top of the vegetables and sausages. Mix with a wooden spoon to make sure that everything is coated with the oil mixture.

Roast for about 40-45 minutes until the sausages are cooked and the vegetables are tender and brown.
